Quick and Easy Cookie Recipes - Drop Sugar Cookies and White Chip Apricot Oatmeal Cookies

2 cups all-purpose flour, sifted
2 teaspoons baking powder

2 large eggs
3 / 4 cup sugar + extra sugar for topping
2 / 3 cup canola oil
2 teaspoons vanilla extract
1 teaspoon grated lemon peel

Preheat oven to 400 degrees.

Mist the bottom of a 3-inch flat-bottom glass with water and dip glass in additional sugar. Press tops of cookies lightly with the glass, fogging with waterand immersed in sugar for each cookie. Bake until lightly browned, about 8 minutes. Cool on baking sheets for two minutes, then remove to wire racks to finish cooling. Store in an airtight container.

WHITE CHIP APRICOT Oatmeal Cookies

3 / 4 cup butter, softened
1 / 2 cup granulated sugar
1 / 2 cup packed brown sugar
1 egg
1 cup all-purpose flour
1 teaspoon baking powder
2 1 / 2 cups rolled oats
10-ounce pkg Hershey's Premier WhiteChips
3 / 4 cup dried apricots

Preheat oven to 375 degrees.

The butter, granulated sugar and brown sugar in large bowl until fluffy. Add eggs and beat well. Flour and baking powder, beating until well combined. Stir in oats, white chips, and apricots. Loose form rounded teaspoons of dough into balls and on ungreased baking sheet. Bake 7 to 9 minutes or just until they are lightly browned. Do not overbake! Let cool, remove baking sheet to cool on a wire rackcomplete.

Yield: 3 1 / 2 dozen cookies.
