Understanding Baking - How Yeast Works

Did you ever wonder why flour tastes like sawdust but a French or Italian bread with the same flour and little else has a pleasant, sweet taste?

Bread would not be bread without yeast and yeast can not work without sugar. Yeast is alive living organisms and living things need food for fuel, sugar, in this case, simple. But flour is mainly starch and table sugar (sucrose) is too complex for the yeast before fermentation. Amylase and invertase, enzymes in the flour or newly created by the yeast, degradation of starch into sugar molecules. Some of these simple sugar molecules as food for the yeast, while others create the sweet flavor we find in a fine French bread, a bread, where no added sugar.

As the yeast feeds on sugar, creates two digestive byproducts-alcohol (ethanol) and carbon dioxide. The carbon dioxide is what the attic to create sourdough bread, the carbon dioxide gas filter through the dough. The alcohol evaporates in> Cheeks.

The biological and chemical processes taking place as the bread ages and rises is called fermentation. In general, a long, slow fermentation makes for a better save taste, texture and moisture. Many fine breads call for delay "or a slowing of the growth of the yeast with refrigeration. When dough is chilled, the yeast grows more slowly. The fermentation is still the amylase enzymes work in the dough and sugar is released but at a slower pace.If the dough is heated and starts the growth of yeast, there are abundant sugar for the yeast and a surplus of sugar to sweeten the bread.

When the yeast grows more slowly, we find the richer, fuller flavor of breads with remaining dough. In the previous article, we discussed a focaccia that uses refrigeration to produce a slowdown in the growth of yeast and the desired crumb and flavor. Is it a good bread without retarding? Yes, but it does not give delaying desirableFlavor overtones and a more open crumb.

Baking Your Hand Painted Glasses

It's funny, I have received so many e-mails in the past week from people who are trying to have its own color glassware. You want to give them as gifts for the upcoming celebration. These are questions that use the type of paint on it is really okay, the glass in the oven?

You could have the same questions, but were too afraid to ask. Well, first ask again, do not be afraid. I know I sure did my share of questions asked by other artists, although Ipainting for years. Most of them were more than willing to share information as well as giving pointers. I know I am more than willing to help others with their questions.

My first suggestion when it is beginning to paint on glass to the instructions on the color that you follow to use. I recommend that if the piece suggests, so that dry for a certain time to make sure you follow them carefully. It can make a difference in how your piece turns out.

TheImportant thing to remember if you want to bake glassware, it is held in your oven if it is cold. Start your pre-heating process after it has already put into the oven. When baking is complete, allow your pieces to cool completely before removing it from the oven. Sudden change in temperature is what causes the glass to break. If you follow these instructions, you should be good.

When in doubt, always ask!

Shortening, Butter or Margarine - What is Best for Baking Cookies?

There is so much controversy about what is best to use for baking cookies. You probably also want to scratch his head to figure out this dilemma. Which is healthier to use than the others? With a little research, we can solve this dilemma.

First, what is the shortening? It is a semi-solid fat, and refers to a hydrogenated vegetable oil. There is so much controversy about what is best to use for baking cookies. You probably also want to try to scratch his head, out dilemma.Hydrogenation this is a process of bubbling hydrogen through vegetable oil, changing its chemical structure. This process is the liquid to a solid at room temperature and below. Shortening is 100% fat. Butter and margarine contain 80% fat. Hydrogenation produces trans fats, which are the unhealthy fats known cause of heart disease. The advantage of shortening over butter or margarine) is its smoke point (higher temperature before burning. Another advantage is the onehigher melting temperature. During the baking of cookies helps dough hold its shape longer. This allows the use of flour and eggs, keep spreading the dough too much. There are some new products on the market, shortening that contain trans fats, or very little.

Secondly, what is margarine? Margarine is made from vegetable oils and again contains no cholesterol. Margarine is high in good fats (unsaturated and monounsaturated), but contains some saturatedFats. Some margarine is worse than others. Hydrogenation solidifies the margarine. The harder the margarine contains more trans fats. Trans fatty acids raise levels of bad cholesterol and reduce levels of good cholesterol, which makes it worse than saturated fats. Tub margarine is lower in trans fats than stick margarine.

Third, we all know that butter made from cow's milk, a cream fat. Being that it is animal fat, which is loaded with saturated fat and cholesterol. Butterand margarine are equal in calories and fat. Each contains about 35 calories and 4 grams of fat per teaspoon. Butter is believed to contain traces of hormones and antibodies against the milk-fed cows. On the bright side of butter contains fat-soluble vitamins A, D, E and K.

OK, now that you are now more than ever confused, let's compare. Margarine is better than butter when it comes to our heart, but falls flat in the taste department. Butter also adds a creamy texture. Shortening helpsKeep your cookies before discharge or spreading out, but again does not improve the taste. In fact, shortening has no flavor. If you have a fluffy cookie fanatics only half shortening and half butter. You get the cookie with the pantry posed taste.

Finally, should you use salted butter or butter. Salt in butter acts as a preservative, so butter will not go rancid if left at room temperature. The disadvantages are you add extra salt to your recipe. The problem withReducing salt in a recipe to substitute salted butter for different brands of butter have different salinities. The rule of thumb is if you reduce the salt added to salted butter ½ teaspoon per cup of salted butter. The purist bakers always butter. In this way they can be in control of the salt is added to the recipe. Salt in butter is also believed to add the flavor, overpowering the sweet taste of butter, butter and mask odors.

When it comes to the decisionsbetween shortening, margarine, butter or salted butter is a personal preference. But at least with information, we can make an informed decision. The best way to decide what is best for you is to experiment. Try different ways to bake cookies and have fun. As they say, "The road is the best part of the journey."

Better Baking Technique - Is it Done Yet?

Are my breads, biscuits or cakes baked and ready to come out of the oven yet?

The ability to tell when products are baked seems to cause more confusion than almost any other phase of baking. And of course it's important. Over baked cookies are dry and hard, under-baked bread is soggy. But you can make it right. In this article we give you the techniques and tips for baking your goods to perfection.

Yeast Bread

There is a tendency amongYeast bread baking. The internal temperature of yeast bread should be at least 210 degrees and 185 degrees. The only way to reliably tell what is going on within this bread with a probe type thermometer. Remove the bread from the pan and insert the thermometer through the bottom crust in the middle of the bread.

(If you are going to bake bread, and you do not have a thermometer, we strongly recommend that you make a purchase. They are needed to test the temperature of the water, the dough and the finished bread. You can buy one on our website.)

If the bread is done, the crust color ranges from golden brown to dark brown for artisan baked in the oven. Breads with a higher sugar content or in a hot oven will tend to caramelize faster than the brown sugar. If the bread is browning too quickly to a tent of aluminum foil and cover the top of the bread.

In bright pans, the lower crust of the last to brown. Done with a loaf ofFloor pan is painted in a bright color.

My mother was a bread baker. They considered doneness by tapping on the bread with the fingers - a bread made sounds hollow when tapped. I do not know that they ever make a mistake. Although she taught me to do the same, I'm not as good as it was. Out of habit I still tap the bread, but I almost always with a probe and sometimes the thermometer shows follow me wrong.

Cookies

If the tendency to bake the bread in theTendency is to over bake. Take them out just before you think they're done, you will not often be wrong.

My father is a consummate cookie baker. If you do it, what is his secret, ask, he will tell you: "I do not remember bake." The difference between a right and a baked on a cookie is dramatic.

Make cookies to be uniform in size. They are not only attractive but different sizes of cookies at different times to bake.

Most recipe writers tell you to leaveCookies on the sheet for one or two minutes. Cookies continue to bake on a hot griddle. Sometimes it is necessary for a simple version, but removed for most recipes, we will as soon as we can.

If the cookies look a little moist in the middle, then leave them on the sheet for a few minutes, and they will for implementation.

Most cookies should be gold in color, not brown. Both will affect the amount of sugar and soda in the recipe, how fast a cookie browns.

Chocolate Cookiesare another challenge: you can not say whether they are browned. If you bake with a new recipe, bake a few cookies and check them for doneness before baking the entire batch. Chocolate cookies will tend to lose their "wet" look when you're done.

Many bar cookies have a dry, shiny crust when you're done.

Cakes

For most baked goods - cakes, but above all - it is best to set the timer for a few minutes less than directed in the recipe different ovens or evenvarious positions in the oven bake differently. A dark pan bake faster than a light pan. If you have your cake does not quite done yet and continue baking, set the timer to check three or four minutes and again.

A toothpick is inserted in the center of the cake to come clean when you're done. "Clean" a few crumbs. If it is wet dough have to adhere to the toothpick, it is not done.

If you do not want a whole in the center of the cake, please check doneness with bagYour finger. There should be some flexibility in the touch and the cake should spring back. When you are finished, the cake will tend to have a golden brown color on the top though different recipes will brown more or less quickly. When you are finished will the cakes tend to pull away form the edges.

Quick Breads

Quick bread, cakes are generally in a rectangular form. The same tests that you used on cakes with quick bread. Glue the toothpick or skewer right into the open slit in the middle ofthe bread. The area under that crack seems to be the last area to establish in the bread.

By the way, rapid release of bread from the pan easier if left to for a few minutes before you cool. Is due to the larger mass, a loaf of no further cooking as quickly as cookies.

Custard Pies

Custard pies, including pumpkin pie is a particular problem. It takes a while for the protein in the eggs to set and tie up the cake. Often, the crust is becoming too brownBefore the eggs. If so, cover the crust with strips of aluminum foil to retard further browning.

If a cream cake is done, a knife in the center of the cake is added to come clean. If you do not want a cut mark in the middle of the segment, use the jiggle test. Choose the cake shake with two hot pads or gloves, and the cake back and forth. If this is done, all but the center should be firm, it will be a little wiggle in the middle. The center is to cook and solidify, afterRemove the cake from the oven.

We hope that these guidelines will help. With practice and observation, you will soon be very competent to judge if your bread and pastries are baked to perfection. Your baked goods will then be irresistible.
